Ingredients
- 1 cup key lime juice (12 to 14 key limes)
- 2 tsp honey
- 2/3 cup water
- 2 tsp salt
- 1/2 tsp pepper
- 1 tsp thyme
- 2 tbsp olive oil
- 1 tbsp fresh ginger, peeled and chopped
- 4 large boneless, skinless chicken breasts
Preparation
Step 1
To make marinade, combine all ingredients except chicken in a food processor and process until well blended. Set aside 1/4 cup of marinate for basting. Combine chicken and rest o marinade in a large plastic zipper bag and marinate in refrigerator for 8 to 12 hours. Drain marinade. Grill chicken breasts over high heat, turning once and basting often with marinade, until cooked though.
Garnish with fresh cilantro and key lime slices, if desired.
