Chocolate Lava Cakes (L'Academie de Cuisine)

Ingredients

  • To coat ramekins:
  • 7 oz. semi-sweet chocolate
  • 1 oz. butter
  • 5 eggs
  • 5 oz. powdered sugar
  • 2 oz cake flour
  • Melted butter
  • Cocoa powder
  • Flour
  • Brush melted butter into ramekins. Combine cocoa powder and flour and coat over melted butter.

Preparation

Step 1

Place butter and chocolate in a bowl over simmering water. Stir until chocolate and butter is almost melted - remove from heat and continue stirring until completely melted.

Place eggs in a mixing bowl and stir them over the simmering water until warm to the touch. Place bowl on standing mixer and whip eggs to the ribbon.

Fold melted chocolate into the eggs (bottom up, bottom up, scrape down).

In separate bowl, sift flour and powdered sugar a couple of times.

Using a sifter, gradually fold the flour/sugar combination into the batter.

Fill ramekins 3/4 full.

Bake at 350 degrees until the edges are firm (brownie-like) and the center jiggles.

Turn out onto plate and serve warm (great with ice cream).
