Ingredients

  • 1

    pound fresh brussels sprouts

  • ½

    cup water

  • salt and pepper to taste

  • 1

    tablespoon dijon mustard

  • 2

    teaspoons freshly squeezed lemon juice

  • 2

    teaspoons balsamic vinegar

  • 1

    tablespoon extra-virgin olive oil

  • 1

    clove, garlic, minced

  • 2

    tablespoons shaved parmesean cheese

Directions

trim the ends from the brussels sprouts and cut each sprout into quarters. Heat water in a medium nonstick skillet. Add brussels sprouts. Season lightly with salt and pepper. Cook, uncovered, over medium-high heat, stirring frequently about 10 minutes or until just tender and liquid has evaporated. (If there is additional moisture remaining once brussels sprouts are tender, drain brussels sprouts) Whisk mustard, lemon juice, vinegar, olive oil and garlic together. Toss brussels sprouts together with dressing. Shave parmesan cheese over top. makes 5 servings
