Peppermint White Chocolate Shortbread Bites

Ingredients

  • 2 cups (4 Sticks) unsalted butter, cut into small pieces, plus more for pans
  • 1 cup firmly packed light-brown sugar
  • 5 cups all-purpose flour
  • 1 tsp salt
  • 2 cups white chocolate chips
  • 2 cups crushed peppermints-1/4 c. aside
  • 1/2 t. peppermint extract
  • 3 oz. white chocolate bark

Preparation

Step 1

Preheat oven to 350 degrees. Grease a 9 x 13 pan with butter. Combine butter and brown sugar and beat until fluffy. Set aside. Combine salt and flour and stir. Add to butter mixture. Fold in chips and peppermint. Bake for 20 minutes and test for doneness. Cool completely. Cuy into small squares. Place on parchment paper. Melt white chocolate bark in microwave. Drizzle over shortbread. Sprinkle crushed peppermint on squares.
