Vegetarian Lime Orzo

This recipe is pretty darn good. Best as a side though -- I tried it as a main course and it was a little wimpy. The original recipe calls for parsley and green onions, but I left those out. It also calls for stewed tomatoes, which I substituted with regular canned diced tomatoes.

Ingredients

  • 2 Tbsp olive oil
  • 2 cloves garlic, minced
  • 2 cups orzo pasta
  • 1 zucchini, peeled and shredded
  • 1 carrot, peeled and shredded
  • 1 (16 oz) can stewed tomatoes, undrained
  • 1 (14 oz) can vegetable broth
  • 1 tsp Italian seasoning
  • 1 tsp dried basil
  • Salt and black pepper to taste
  • 2 tsp grated lime zest
  • 2 Tbsp lime juice
  • 1/2 cup grated Parmesan cheese for topping

Step 1

Heat olive oil in a large skillet over med-hi heat. Stir in the garlic and orzo pasta; cook and stir until pasta turns a light golden color, about 5 min. Stir in zucchini and carrots; cook until vegetables soften, about 2 min. Stir in the tomatoes, vegetable broth, Italian seasoning and basil. Season with salt and pepper to taste. Reduce heat to med. Cover and simmer until almost all liquid is absorbed, about 10 min. Stir in the lime zest and lime nice. Remove from heat, cool slightly and serve with Parmesan cheese.
