Ingredients

  • 1 small can green chilies
  • 2- 10oz cans enchilada sauce (white)
  • 1 red pepper- seeded and chopped
  • 1 small onion chopped
  • Either 1/2 of a Rotisserie chicken shredded, or 3 cooked, shredded chicken breasts.
  • Half and half- a drizzle
  • Cumin and chili powder to taste
  • Big flour tortillas
  • 4 cheese shredded Mexican- 1 small bag

Preparation

Step 1


Saute the onion and red pepper in a pan.

Add chicken, green chilies, spices, and almost 1 can of enchilada sauce.

Cook for 5 mins. Remove from heat.

Let cool. Add mixture to tortilla, roll up, and place in 13x 9 pan with seam down.

Pour remaining enchilada sauce over top and drizzle half and half over top. Sprinkle with cheese.

Bake 350* for 30-35 minutes
