Almond Chocolate Chip Cookies

This is a recipe I adapted from Leslie Sansone's Eat Smart, Walk Strong. KC

Ingredients

  • 2 1/2 cups Almonds
  • 1/2 cup sugar or sugar substitute (I have used 2 Tbsp Truvia or 1 tsp stevia)
  • 2 tsp lemon juice
  • 2 tsp vanilla extract
  • 1/2 cup mini chocolate chips

Preparation

Step 1

Preheat oven to 375 degrees. Grease baking stone or cookie sheet. (or use parchment paper)

Grind almonds until very fine. Mix in bowl with remaining ingredients

put all ingredients except chips in a food processor and chop until the almonds are very fine and dough has formed. Then stir in chips.

Pick up small handfulls of dough, squeeze tightly into 1-inch balls, and place on cookie sheet.

If desired let the cookies sit at room temperature for at least 2 hours, which helps to keep them from falling apart. (but doesn't seem necessary)

Bake for 8-10 minutes until the cookies are golden brown. Remove from the oven and let cool on rack or on brown paper bags.
