Ingredients
- ¼ cup white or gold tequila
- ½ teaspoon grated lime peel
- 2 tablespoon lime juice
- 2 tablespoon water
- 1 tablespoon honey
- Pepper to taste
- 1 lb shrimp peeled deveined
- 3 teaspoons (or more) orange liqueur
- 2 tablespoon cilantro chopped
- 1 large red onion thinly sliced
Preparation
Step 1
1. In bowl mix tequila, lime peel, lime juice, water, honey, pepper
2. Pour into frying pan and add shrimp
3. cook over medium high heat until shrimp are pink
4. transfer shrimp to a bowl and keep warm
5. bring remaining liquid to a boil and reduce to 1/3 cup
6. remove from heat and slowly add orange liqueur
7. While doing all of this or ahead of time slice red onion into thin slices and arrange in a single
Layer in a platter
8. Spoon the shrimp and liquid over the onions and garnish with cilantro and lime wedges
