10-Minute Beer Cheese Soup

Ingredients

  • 2 pouches (9 oz each) Progresso™ Recipe Starters™ creamy three cheese cooking sauce
  • 2 cups Progresso® chicken broth (from 32-oz carton)
  • 1/2 cup light beer
  • 1/4 cup half-and-half
  • 1/2 cup shredded Cheddar cheese (2 oz)

Preparation

Step 1

1 In food processor or blender, pour cooking sauce, broth, beer and half-and-half. Cover; process on High speed 1 to 2 minutes or until smooth.

2 Pour soup mixture into 4-quart Dutch oven or saucepan. Heat to a gentle simmer over low heat. Stir in cheese until melted.

3 Divide soup among 4 small soup bowls. If desired, garnish each with additional Cheddar cheese.

Serve the soup with some fresh baked Pillsbury® refrigerated crusty French loaf, or top with crunchy croutons.

You can make this soup a day ahead and reheat it gently on the stove for 2 to 3 minutes.
