Ketchup--Easy SCD Ketchup (*SCD=Specific Carbohydrate Diet)

Ingredients

  • 1/2 cup tomato paste (SCD legal, from Italy or Trader Joe’s--look for products that only have tomatoes listed as an ingredient)
  • 1/8 cup white wine vinegar
  • 3 TB honey
  • 1/4 tsp granulated garlic
  • 1/4 tsp allspice (getting the ‘ketchup’ flavor is all about allspice)
  • 1/2 tsp sea salt
  • 1/4 tsp ground black pepper
  • 1/4 tsp onion powder (you can grind your own from dehydrated minced onions if you don’t have a brand that you trust)

Preparation

Step 1

Combine all ingredients in a glass jar. You can use it immediately, but I’ve found that the flavors combine better after it has been in the refrigerator a few days. Of course, if you have time, you could probably simmer it over the stove for awhile to really meld the flavors. I’d probably add about 1/4 cup water if I was going to do that since some liquid evaporates when you simmer it.
