Small Fruitcakes that are made with Cornflake Crumbs

Ingredients

  • 3 eggs, beaten
  • 1 14 oz can Eagle Brand Milk
  • 1 28 oz jar mincemeat
  • 1/2 cup flour
  • 1 tsp baking soda
  • 2 cups cornflake crumbs
  • 1 jar candied cherries about 72

Preparation

Step 1

Preheat oven to 300. Mix the beaten eggs with the Eagle Brand Milk.
Add the flour and the baking soda, mix until blended. Stir in the mincemeat, and cornflake crumbs. Pour into mini muffin cups. Decorate each cake with a cherried candy. Bake at 300 for 20-25 minutes.
