Low Carb Sweet Potato Slaw

Recipe from George Stella’s “Still Livin’ Low Carb” Cookbook
Ingredients
- 1/2 cup mayonnaise, may use plain yogurt
- 1/3 cup sour cream
- 1/3 cup sugar substitute
- 1/2 cup chopped walnuts; may use pecans
- 1 tablespoon balsamic vinegar
- 2 cups shredded sweet potatoes, blanched 30 seconds in boiling water, chilled and drained well
- 2 red apples, shredded
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 1/4 teaspoon ground cinnamon
- 1/8 teaspoon ground ginger
- SPECIAL EQUIPMENT: Cheese grater or food processor with cheese grater attachment blade

Step 1
1. Mix all ingredients together in a large bowl, tossing to combine. Chill for 2 hours before serving garnished with walnuts halves if desired.
HELPFUL HINTS
It’s easy to shred the sweet potato using the largest hole of a cheese grater but it’s even easier if you have a food processor with the cheese shredder attachment blade!
