Ingredients

  • 1/2 cup mayonnaise, may use plain yogurt
  • 1/3 cup sour cream
  • 1/3 cup sugar substitute
  • 1/2 cup chopped walnuts; may use pecans
  • 1 tablespoon balsamic vinegar
  • 2 cups shredded sweet potatoes, blanched 30 seconds in boiling water, chilled and drained well
  • 2 red apples, shredded
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon ground ginger
  • SPECIAL EQUIPMENT: Cheese grater or food processor with cheese grater attachment blade

Step 1

1. Mix all ingredients together in a large bowl, tossing to combine. Chill for 2 hours before serving garnished with walnuts halves if desired.

HELPFUL HINTS
It’s easy to shred the sweet potato using the largest hole of a cheese grater but it’s even easier if you have a food processor with the cheese shredder attachment blade!
