Ingredients

  • 12 -14 Macintosh apples
  • 3/4 cup Apricot jam (I use the 'fruit only' variety)
  • 1 Tbs. vanilla extract (the real stuff)
  • 1 Tbs. lemon juice
  • 1 tsp. cinnamon
  • 1/2 cup light brown sugar
  • 2 Tbs. butter

Preparation

Step 1

1. Peel and core the apples. Cut them into fairly thin slices.

2. Cook the apples in a large stock pot, covered, over low heat for 30 - 40 minutes. This can take even longer ... be patient. You are looking for a pulpy consistency, with all the apples cooked down. Stir every now and then.

3. Once the apples are soft and cooked down, lower the heat even more and stir in the remaining ingredients.

4. Let cool completely and store in an air tight container in the refrigerator. The applesauce keeps for about 3 weeks! But in our house, I'm lucky if it lasts 3 days.
