Ingredients

  • 1 Tbsp butter
  • 2 garlic cloves and 1 large onion, chopped
  • 1 green pepper, diced
  • 1 lb lean ground beef
  • 1/2 tsp ground cumin
  • 1 tsp chili powder
  • 19 oz can red kidney beans, rinsed and drained
  • 1 cup long-grain rice
  • 1 1/2 cups corn kernels
  • 1 1/2 cups salsa
  • 1/2 cup water
  • 2 cups cheddar cheese, grated or diced

Preparation

Step 1

Large saucepan, saute garlic, onion, green pepper and beef in melted butter
add spices and saute 2 min
Stir in red kidney beans and rice and cook for 3 min
Add corn, salsa, and water
Bring to boil and simmer over low heat for 20 - 25 min
Serve in bowls and garnish with cheddar
