Choc-caramel Maltesers ice-cream cake 1 Picture

Ingredients

  • 1 L caramel ice-cream, softened
  • 100 g Maltesers, plus extra to serve
  • 150 g plain chocolate biscuits
  • 80 g butter, melted
  • 100 g dark chocolate
  • 3/4 cup thickened cream

Preparation

Step 1

Step 1
Spoon ice-cream into a 6cm-deep, 9.5 x 19.5cm loaf pan. Smooth surface. Press Maltesers, in a single layer, into the top. Freeze for 2 hours or until firm.
Step 2
Process chocolate biscuits in a food processor until finely crushed. Add melted butter. Process to combine. Press over the Maltesers. Freeze for 2 hours to set.
Step 3
Dip the base of pan in warm water for 2 seconds. Turn onto a plate. Freeze for 30 minutes or until firm. Place 100g dark chocolate and 3/4 cup thickened cream in a heatproof glass bowl. Heat in microwave on high, stirring every minute, until melted. Cool slightly. Drizzle over the cake. Top with extra Maltesers.
