Chocolate Eclair Cake


Just a few ingredients and a few minutes needed for this light and refreshing potluck favorite. Made with layers of whole graham crackers and vanilla pudding then topped off with chocolate frosting.

  • 2-3 blocks of whole graham crackers
  • 2 small boxes instant vanilla pudding mix
  • 3 cups cold milk
  • 1 (8 oz) tub frozen whipped topping, thawed
  • 1 (16 oz) container chocolate frosting (or homemade recipe)


Preparation time 15mins


Step 1

In a large bowl, whisk together the pudding mixes and milk, whisking vigorously for a couple of minutes until smooth and thickened. Gently fold in the whipped topping.

Carefully spread half the pudding mixture over the graham cracker layer in the pan. Top with another layer of graham crackers, then the remaining half of pudding. Top with a final layer of graham crackers.

If the frosting is too thick to spread easily over the top layer of graham crackers, microwave it for a few seconds just to thin but not hot. Frost the top with the chocolate frosting.

Refrigerate at least 4 hours before serving.

((NOTE: I used a 7×11-inch pan here (which made a pan full) and topped with homemade chocolate frosting.))
