Mochiko Butter Cookies

Ingredients

  • 1/2 pound butter, softened
  • 3/4 cup sugar
  • 1 teaspoon baking soda
  • 2 teaspoons vanilla
  • 1 1/2 cups flour
  • 1 tsp. salt
  • 1/2 cup mochiko flour
  • 1 cup chopped macadamia nuts

Preparation

Step 1

Preheat oven to 350 degrees. Cream butter and sugar until light and fluffy, 5-8 minutes. Add baking soda and vanilla. Mix well. Add flour, mochiko and chopped nuts, if using; blend well. Drop by rounded teaspoonfuls onto cookie sheet and bake 15 to 20 minutes or until slightly golden.
