This is the fastest way I've found to make traditional buttermilk waffles in the morning. This is the exact same recipe as my other buttermilk waffle recipe (Food.com #406240), but is re-written to be made as quickly as possible in the morning.

Ingredients

  • Dry Waffle Mix:
  • 3 cups flour
  • 3/4 cup buttermilk powder (Such as Saco brand)
  • 4 tablespoons sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • Wet Ingredients:
  • 4 large eggs
  • 3 cups water
  • 1/2 cup butter, plus extra melted butter to grease waffle iron

Step 1

In advance, when you have time:
1. Combine all of the dry waffle mix ingredients listed above in a zippered freezer bag. Whisk together, or seal bag and shake around until all ingredients are well combined. Store in the freezer until needed.



On the day you want waffles:
1. Preheat the waffle iron.

2. Melt the butter in the microwave.

3. While the butter is melting, remove the eggs from the refrigerator, and place them in a bowl of hot tap water (NOT boiling) to quickly bring them to room temperature (or slightly warmer).

4. In a very large mixing bowl, combine the melted butter, water, and eggs, and whisk until well blended (this works well using a stand mixer with the whisk attachment). Add the zipper bag of dry waffle mix that you've been storing in your freezer to the wet mixture, and whisk until completely smooth.

5. Using a pastry brush, lightly brush the waffle iron with melted butter. This prevents the waffles from sticking and also gives them a nice golden color. Do this for every waffle.

6. Pour the appropriate amount of batter for your particular appliance into the hot waffle iron. Bake the waffles until golden brown. Continue until all the batter is used up.

7. While waiting for each waffle to bake, mix the dry waffle mix ingredients together in the zippered bag like you did previously, and store in the freezer for next time. This can usually be done in the time it takes to cook 1 or 2 waffles.

8. These waffles may be kept on a cookie sheet in a 200 degree F. oven until served, however, they are best served right from the waffle iron.

9. These waffles may be cooled to room temperature and frozen in a zippered freezer bag. Frozen waffles can be heated up very nicely in the toaster.
