Dessert - Grilled Pound Cake (and Berries grilled in foil)

Ingredients

  • 1 lb. strawberries and blueberries, halve strawberries
  • 1 tea. finely grated lemon zest
  • 1 Tbsp. lemon juice
  • 1/4 cup sugar
  • 3/4 tea. cornstarch
  • 1 Tbsp. butter, divided
  • Grilled slices of pound cake
  • Creme Fraiche, for garnish

Preparation

Step 1

Combine all ingredients, except pound cake.

Arrange four 12" squares of heavy-duty foil on a work surface. Spoon 1/4 Tbsp. of butter in the center of each foil square and pour the friut mixture over the butter.

Fold up the hobo packs over the fruit forming a seam across the top. Fold the remaining 2 sides to seal the packs completely.

Grill the hobo packs over moderate heat until sizzling, about 10 minutes. Also grill the pound cake until browned on both sides.

Pour grilled fruit packs over the grilled pound cake. Garnish with creme fraiche and serve.
