Pecan Crusted Sweet Potatoes

Ingredients

  • 3 Large Sweet Potatoes
  • 8 Tbps Butter
  • 1 cup crushed candied Pecans
  • 1 Tbps brown sugar
  • 2 tsp vanilla extract

Preparation

Step 1

Peel the sweet potatoes and cut into thick slices. Set up a steamer and steam the potatoes until they are fork tender (about 20 mins). Put the potatoes into a large mixing bowl and mash using a hand masher. Add the butter, vanilla and brown sugar. Mash ingredients together until will blended. Put the potatoe mixture into a shallow dish. sprinkle alittle brown sugar on top and then spread the crushed pecans evenly across the top. Warm in oven and serve.
