Ingredients
- 1 C flour
- 1/2 C butter, softened
- 2 eggs
- 1 1/2 C brown sugar
- 1/2 C sweetened shredded coconut
- 1 C walnuts, chopped, plus more finely chopped walnuts for garnish
- 2 T flour
- 1/4 t baking powder
- 1/2 t salt
- 1 t vanilla
- 1 1/2 C powdered sugar
- 2 T butter, softened (for frosting)
- 2 T orange juice
- 2 T lemon juice
- few drops of food coloring
Preparation
Step 1
Preheat oven to 350. Blend flour and 1/2 C butter together into paste. Press evenly on bottom of buttered 8 inch square pan. Bake until brown, about 15 to 20 minutes. Let cool for about 10 minutes. Mix together eggs, brown sugar, coconut, nuts, flour, baking powder, salt and vanilla. Pour and spread carefully onto crust and bake 25 to 30 minutes. Cool. Mix powdered sugar, 2 T butter, orange and lemon juices. Add red or green food coloring. Frost bars. Sprinkle finely chopped walnuts on top.
