Whiskey nut cake

Moms fruit cake. The best.

Ingredients

  • Simple syrup for glaze:
  • 2 cups butter
  • 2 cups sugar
  • 6 eggs, room temp
  • 1 cup good whiskey
  • 1 qt. chopped pecans
  • 4 cups cake flour
  • 1 tsp bkg. powder
  • 1 lb chopped dates
  • 1/2 box chopped raisins
  • 1/2 lb chopped cherries
  • 1/2 lb chopped pineapple
  • Equal parts sugar and water, 1 cup each

Preparation

Step 1

Cream butter and sugar, add eggs one at a time, stir together flour and baking powder. Add the flour alternately with the whiskey. Fold in the fruit and nuts. Bake @325* for 1 1/2 hours.
Makes about 6 pound loaves.
Brush with simple syrup while still warm.
Wrap the loaves in cheesecloth and brush with whiskey for about a week.
