Ingredients
- 1/2 c butter
- 3 large egg yolks
- 1 t and 1T lemon juice
- 1/8 t salt
- Dash of cayenne
- 2 T hot water
- Finely chopped parsley

Step 1
Heat butter in heavy sauce pan until hot and foamy but not browned. In a small bowl, whisk together the next 4 ingredients. Gradually beat in butter, then water. Return to sauce pan and beat over low heat until slightly thickened. Serve immediately.
