Grilled Greek Chicken Kebabs

Ingredients

  • 1 pound bonless skinless chicken thighs, cut into 24 one inch pieces
  • 1 zucchini, halved lenghtwise and cut crosswise into 16 one inch pieces
  • 1/2 small red onion, quartered.layers separated
  • 2 tablespoons olive oil
  • 1 teaspoon oregano
  • 3 tablespoons red wine vinegar
  • tzatiki sauce for serving

Preparation

Step 1

1. In a resealable plastic bag,combine all ingredients, season with salt and pepper. Marinate at room temperature for 30 minutes or refrigerate up to overnight
2.Heat grill to medium
Soak 8 six inch wooden skewers for 15 minutes
3. Onto each skewer, alternately thread 3 pieces of chicken with 2 of zuchini and 2 of onions.
4. Grill skewers, turning occassionally until chicken is cooked through 12-14 minutes
