Ingredients
- 1 pack of tempeh
- 3 sticks of celery chopped
- 1 medium carrot chopped small
- 1/2 red onion minced
- 1 dill pickle diced (or low sodium relish)
- 1/2 cup raw cashews
- 1 cup water
- 1/4 cup red wine vinegar (or fresh lemon or lime juice)
Preparation
Step 1
Steam tempeh for 5 minutes. Crumble steamed tempeh and combine with the chopped veggies.
Blend cashews in a food processor or blender on high. Slowly add wine and half the water.
Taste and add more water as desired. Season to taste.
Combine and enjoy with salad greens, on a roll, or with cracker
