Tempeh “Chicken” Salad Recipe

Ingredients

  • 1 pack of tempeh
  • 3 sticks of celery chopped
  • 1 medium carrot chopped small
  • 1/2 red onion minced
  • 1 dill pickle diced (or low sodium relish)
  • 1/2 cup raw cashews
  • 1 cup water
  • 1/4 cup red wine vinegar (or fresh lemon or lime juice)

Preparation

Step 1

Steam tempeh for 5 minutes. Crumble steamed tempeh and combine with the chopped veggies.

Blend cashews in a food processor or blender on high. Slowly add wine and half the water.

Taste and add more water as desired. Season to taste.

Combine and enjoy with salad greens, on a roll, or with cracker
