Ingredients

    cups fresh corn, cooked

  • 1

    can (15 oz) black beans, rinsed and drained

  • 3/4 - 1

    cup chopped and seeded anaheim chili peppers

  • 1/8 - 1/4

    cup chopped and seeded jalapeno peppers

  • 1/4

    cup vinegar

  • 2

    Tablespoons vegetable oil

  • 1

    Tablespoon Dijon Mustard

  • 1

    teaspoon chili powder

  • 1

    teaspoon ground cumin

  • 3/4

    teaspoon ground cumin

  • 3/4

    teaspoon salt

Directions

In a large bowl, combine carn, beans and peppers. Combine remaining ingredients in a small bowl; pour over corn mixture and toss to coat. Chill.
