Dump Sauce (Tomato, Kalamata Olive, Caper and Garlic) for Chicken

This sauce was created by "dumping" whatever I had available into a pan.

Ingredients
- Olive Oil
- Crushed Garlic - lots
- 2 cans stewed tomato's
- 2 + tbsp capers
- chopped Kalamata Olives - lots
- Artichoke hearts (if you have them)
- Balsamic vinegar
Preparation
Step 1
Saute the garlic in olive oil until golden. Add the remaining ingredients, breaking up the stewed tomatoes, and simmer until reduced. If the sauce gets too thick you can add some water or wine, if you have an open bottle. Serve over pasta and/or beaded chicken cutlets.
