Ingredients
- 1 cup cooked quinoa
- 1 cup quick style old-fashionsed oats
- 1 cup fresh pineapple (chopped)
- 1/2 cup shredded coconut
- 1 tsp lemon juice
- 1 TBS light corn syrup
- 3 TBS brown sugar
- 2 eggs (beaten)

Preparation
Step 1
Preheat oven to 350 degrees.
In a large mixing bowl, combine quinoa, oats, pineapple and shredded coconut.
Mix well.
Add remaining ingredients and combine again.
Spray mini muffin pan with cooking spray and pack pineapple coconut quinoa into muffin slot (about 1 large tablespoon).
Bake in oven for 15-20 minutes.
Allow to cool and then remove from muffin pan.
