Ingredients
- 1 1/4 cups plain dry breadcrumbs
- 1/4 cup olive oil
- 1/3 cup flour
- 2 large eggs, lightly beaten
- coarse salt and pepper
- 4 boneless, skinless chicken breast halves ( about 6 oz each)
Preparation
Step 1
1. Preheat oven to 425. On a rimmed baking shet, toss bread crumbs nad 1/4 cup olive oil until well combined.;spread on sheet. Cook tossing once until golden brown about 6-8 minutes. Transfer to bowl
2. Place flour and eggs in separate bowls;season with salt and pepper
3. One at a time,place chicken breasts between two large pieces of plastic wrap, using a meat mallet, pound each cutlet till 1/2 inch thick. Coat eachpiece of chicken with flour( shaking off excess),then dip in eggs ( allowing excess to drip off);dredge in breadcrumbs, press firmly to adhere
3. Bake chicken on a rack on top of a rimmed baking sheet without turning until opaque throughout 10 -15 minutes
