Ingredients

  • For filling:
  • 1/2 C. cocoa powder
  • 3 C. flour
  • 1 tsp. each baking powder and salt
  • 1 C. butter
  • 2 C. packed brown sugar
  • 2 eggs
  • 2 tsp. vanilla
  • 3/4 C. milk
  • 2 (14oz) cans sweetened condensed milk
  • 3 C. unsweetened shredded coconut
  • 1 C. finely chopped toasted pecans

Step 1

Heat oven to 350. Line two baking sheets with parchment paper. In large bowl sift together, flour, cocoa, salt and baking powder. In another large bowl, use a mixer and beat butter and brown sugar together until light and fluffy. Add eggs, oneat a time, scraping the bowl after each addtion. Stir in vanilla. Add dhalf flour mixture, stirring to combine. Add the milk, scraping the bowl to ensure even mixing. add other half of flour mixture and mix well. Working in batched, drop cookie dough by the tablespoonful onto prepared sheets, leaving 2 inches between each for even spreading. Bake 12-15 mins. or until slightly firm to the touch. Allow to cool on bakinjg sheet. repeat with remaining dough. Meanwhile make filling. In a large skillet, over medium heat, combine sweetened condensed milk and coconut. Heat, stirring constanstly, until mixture starts to pull away fdorm the pan and will hold a line whne you drag a spoon through it, 8-10 mins. Allow to cool slightly. Place pecans in shallow bowl or pie pan. Spread a spoonful of coconut mixture onto flat side of cooled cookie. top with another cookie to form a sandwich. Roll edges of cookie into pecans.
