Ingredients

  • Crust:
  • 2 c all purpose flour
  • 1/2 c sugar
  • 1 c soft butter
  • 2 egg yolks
  • 2 T grated lemon peel
  • Filling:
  • 5 8oz soft cream cheese
  • 1 3/4 c sugar
  • 3 T flour
  • 2 t vanilla
  • 1/4 t salt
  • 6 eggs and 1 yolk
  • 1/2 c. whipping cream

Step 1

Preheat oven 400. Grease springform pan and remove bottom. Mix all crust ingredients together and press 1/3 on bottom,put on cookie sheet and bake 8-10 minutes. Cool and assemble pan. Press rest of dough on sides. Heat oven 475.
Beat cream cheese,sugar,flour,vanilla, and salt until well combined.
add eggs 1 at a time. Mix in whipping cream. Pour into crust. Bake 15 minutes at 475. reduce heat to 200 bake 1 hour 15 minutes. turn off oven, open door and let set 15 minutes. Cool additional 30 minutes on counter. cover and chill at least 12 hours.
