Cottage Casserole

Ingredients

  • 12 ounces bow tie or elbow pasta
  • 4 C Spicy Tomato Sauce or bottled marinara sauce
  • 1 container low fat cottage cheese (1 pound)
  • 8 oz. sour cream
  • 1 package ( 10 oz) frozen chopped spinach, thawed and squeezed of excess liquid
  • 3/4 C chopped scallions
  • 1 t salt
  • 1/2 t pepper
  • 2 C shredded cheddar cheese

Preparation

Step 1

Cook pasta according to directions, omitting salt and undercooking by 2 minutes. Drain.

Meanwhile, heat oven to 375. Grease 12 C oven proof casserole.

Mix pasta, sauce, cottage cheese, sour cream, spinach, scallions, salt, pepper in bowl. Spoon into casserole. Top with cheddar. Cover with buttered foil.

To freeze unbaked casserole, cool casserole slightly. Cover with waxed paper, then foil. Refrigerate until cold.

Bake, covered in 375 oven uncovered. Bake 20 minues.
