Make ahead Turkey Gravy

  • 4 Turkey Wings
  • 2 Medium onions quartered
  • 8 C chicken broth
  • 2 carrots chopped
  • 1/2 t thyme
  • 3/4 c flour
  • salt and pepper



Step 1

preheat oven 400. Arrange wings in a single layer in large roasting pan, top with onions and roast 1 1/4 hours.
Put wings and onions in 6 qt pot. Add 1 c water to roasting pan and scrape bottom clean,add to stock pot. Add 6c broth,carrot and thyme to pot and bring to a boil. Reduce heat and simmer 90 minutes. Strain broth into a 3 quart pan. Whisk in small bowl flour and 2 c broth. Bring stock broth to boil and whisk in flour mixture. Boil 3-4 minutes add salt and pepper. Can be refrigerated or frozen at this point. Thaw in fridge then let come to room temp(30minutes) whisk while reheating.
