Ingredients
- 2 cups of your favorite dry pancake mix
- 3 tbsp dark brown sugar
- 2 1/2 tsp pumpkin pie spice
- 1 1/2 cups milk
- 1 cup canned pure pumpkin puree
- 1 egg, beaten
- 1 tsp pure vanilla extract
- 1 tbsp canola oil
- pure maple syrup

Step 1
1. in a large bowl, combine pancake mix, brown sugar, and pumpkin pie spice. in another bowl, mix together milk, pumpkin puree, egg, vanilla and oil. combine wet and dry and stir until blended.
2. heat a lightly oiled griddle or large frying pan on medium-high heat. pour the batter onto the griddle, using approximately 1/4 cup batter per pancake. cook until bubble come to surface, then flip. cook until lightly browned.
3. serve with warm, pure maple syrup.
