Ingredients

  • 2 1/4 cup flour
  • 1/2 tsp salt
  • 3/4 cup cold butter
  • 5-7 tbsp ice water

Step 1

1. sift flour and slat together; place in medium bowl. divide butter in half. cut half of butter into flour with fingers, pastry cutter, knives; until it resembles coarse meal. cut in the remaining butter until the mixture resembles small peas.
2. sprinkle ice water over the dough mixture; toss with a fork to moisten evenly. use as few strokes as possible, along with minimum amount of water. gently press dough into two balls and flatten slightly. wrap in plastic and refrigerate for at least 1 hour. (dough will keep 2-3 days, freeze up to 1 month)
