Chocolate Strawberry Cupcake

If you LOVE chocolate covered strawberries then you’re going to love these chocolate strawberry cupcakes. I know you don’t always have time to make things from scratch so here’s an easy recipe that can be done weeks in advance and frozen. Make the frosting the day you’re serving the cupcakes

Ingredients
- 1 chocolate cake mix (plus ingredients on the box to make cupcakes)
- 1 strawberry cake mix (plus ingredients on the box to make cupcakes)
- 1 strawberry butter frosting (recipe below)
- Strawberry Buttercream Frosting
- 1 cup butter, softened
- 1 – 2 pound bag confectioners’ sugar
- 2/3 cup chopped freeze dried strawberries
- 10 drops red food coloring
- 4 tablespoons + 1 teaspoon water (or milk)
Preparation
Step 1
Mix together a box of chocolate cake mix and a box of strawberry cake mix. Add the ingredients the 2 boxes ask for. Put cupcake liners into the cupcake tins. Fill liners 2/3 full and bake according to the directions on the boxes.
Dress up these cupcakes by dipping a fresh strawberry in chocolate!
Or dip a freeze dried strawberry in chocolate!
Strawberry Buttercream Frosting
Beat butter until fluffy.
Add confectioners’ sugar, freeze dried strawberries and food coloring. Then add water (or milk) a little at a time until creamy.
Dress up these cupcakes by dipping a fresh strawberry in chocolate! Or dip a freeze dried strawberry in chocolate!
