Shredded Crispy Beef Szechuan Style

  • Sauce:
  • 1 1/3 lb good quality beef steak, cut beef into thin 3" strips
  • bag or container of carrot sticks 3" pieces
  • bag or container celery sticks 3" pieces
  • 6 green onions cut into 3" pieces
  • 2 Tbsp. corn starch
  • 1 egg
  • 2 tsps. soy sauce
  • 2 tsps. sugar
  • deep fryer or 4 cups oil in pan
  • 1 tsp. choppedd ginger
  • 1 Tbsp. garlic bean paste or hoisin
  • 1 tsp. rice wine
  • dash salt
  • sash pepper
  • 1 Tbsp. sesame oil



Step 1

Mix sauce and set aside: garlic bean paste, rice wine, salt, pepper, and sugar. Prepare carrots and cellery and set aside. In small bowl combine: egg, soy sauce, and beef. Toss to coat beef. Heat oil: deep fry beef strips about 1 min., remove and drain. Do all beef a this time. Now refry beef strips for about 5 ins. until they reach a dry crispyness. In wok or large skillet: heat sesame oil, saute onions, carrots, and celery (don't over cook); add beef strips and sauce mixture, toss to coat. Saute briefly and serve.
