Dutch Black Walnut Christmas Cake

This is a rich, flavorful, cake that just last in your taste buds for such a long time. It is hard to tell if you keep tasting the rich walnut flavor or you loved it so much that you keep thinking about it until the flavor returns to your memory so vividly that it seems like you still have it in your mouth. It just makes you want to go back for more. Here is my Pennsylvania Dutch traditional Black Walnut Cake recipe just as mom always made it. Adjust it how you like it best. Some people enjoy it with the Walnuts sprinkled on top and some people enjoy it best with no Walnuts on top of the icing. Our traditional recipe calls for the Walnuts sprinkled on top.

Ingredients

  • 2 cups sugar
  • 1 cup butter
  • 5 eggs
  • 1 pt. chopped black walnut meats
  • 1 cup milk
  • 3 1/3 cups flour
  • 4 teaspoons baking powder
  • 1/3 teaspoon salt

Preparation

Step 1

Cream the butter and then work in the eggs (well-beaten) and sugar. Then sift the flour, baking powder and salt; add the nuts and stir alternately into the first mixture together with the milk. Oil a large cake pan put in the mixture and bake for 50 minutes in moderate oven. Spread a nut icing over it.
