sweet Potato-Pecan Casserole

Ingredients

  • 7 pounds sweet potatoes (about 12 large), cook in microwave 3 at a time for 5 mins. pricked then put in 350 oven until soft to touch, cool slightly then pull peel off
  • cut into thirds
  • 2/3 cup honey
  • 2 large egg
  • 2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • Kosher salt
  • 2 tablespoon packed dark brown sugar
  • 2/3 cup finely chopped pecans
  • mini sized marshmallows

Preparation

Step 1

Add the cooked sweet pots to the mixer in batches- Add the honey, egg, 1/2 teaspoon cinnamon, the nutmeg, ginger and 1/2 teaspoon salt; mash then whip with an electric mixer until smooth.
Preheat the oven to 350 degrees F. Mist an 9x13inch baking casserole dish with cooking spray.Spread the sweet potato mixture in the prepared baking dish.
Mix the brown sugar, pecans and the remaining 1/2 teaspoon cinnamon in a bowl; sprinkle over the potatoes. Bake until hot and beginning to brown around the edges, 40 to 45 minutes
At the end , top with marshmallows and cook another 10 mins. until browned on top.
