Tzatziki

Ingredients

  • 2 medium cucumbers
  • 5 + large garlic cloves, minced
  • 4 tbsp olive oil
  • 1 tbsp lemon juice
  • 2 1/2 C thick plain yogurt
  • 1/2 tsp salt
  • 1 tbsp fresh dill

Preparation

Step 1

1. Grate cucumbers.

2. Pour mixture in bowl and salt.

3. Let stand 15 minutes.

4. Squeeze all liquid out of mixture.

5. Mix yogurt, garlic, olive oil, lemon juice, dill and cucumber vigorously with a spoon.

6. Chill for 1/2 hour at least.
