Scotty's (grandma's) Scrumptions Sage & Sausage Stuffing

Ingredients

  • 12 C broken up cornbread (Marie Callendar)
  • 6 C good white bread, cubed
  • 1 lb. bacon----cooked until crisp and then crumbled
  • 1 lb. sausage, cooked and crumbled (I get Jimmy Dean's sausage with sage but any kind will do)
  • I C chopped onion
  • 1/2 C finely chopped celery
  • 1/2 C chopped parsley
  • 2 t. basil
  • 2 t. thyme
  • 2 t. rosemary
  • 4 t. sage
  • 1 large can cashews
  • 1/4 lb. butter, melted
  • salt and pepper to taste (I usually add very little to no salt)
  • chicken broth to moisten dressing

Preparation

Step 1

After cooking cornbread, bacon and sausage, saute onions and celery in drippings for a few minutes until onions become translucent. Add to bread and meat mixture. Then add parsley and spices. Measurements for spices are a guess. Start with amounts given and then go from there but be careful not to go overboard. Add cashews and butter and mix thoroughly. Moisten with chicken stock. Place in an oven proof dish and tightly cover. Bake at 350 for approximately 45 min.
