Ingredients
- 4 bay leaves
- 2 cloves garlic
- 1 sprig thyme, rosemary and sage
- Juice 2 lemons
- 1 chicken 2-3 lbs
- 3 eggs
- 2 TBSP parsley
- salt and pepper
- 2 cups flour
- 4 cups grapeseed oil

Preparation
Step 1
Crush bay leaves, garlic and herbs with mortar and pestle, add lemon juice and pour into clean plastic bag
Quarter chicken, remove most of bones, cut each quarter in half
Rinse and pat dry well.
Put in plastic bag and refrigerate 2-3 hours
Beat eggs in bowl, add parsley season with salt and pepper
Remove from bag and dredge each piece with flour, coating well, and shaking off excess
Dip into egg mixture to coat well, dredge again with flour
Fry in oil at 275 degrees F, until golden crisp, make sure oil not too hot
Season salt and pepper
