Ingredients
- 1/2 cup uncooked wild rice
- 5 cups chicken broth-divided
- 1/4 cup butter
- 1 large diced carrot
- 1 medium onion-chopped
- 1/4 fresh sliced mushrooms
- 2 tbsp flour
- 1/4 tsp salt
- 1/4 tsp pepper
- 1 1/2 cups chopped cooked chicken
- 1/4 cup dry sherry
Preparation
Step 1
Rinse rice under cold water and drain.
Combine 2 1/2 cups broth and rice in 2qt pan. Bring to a boil. Reduce heat and simmer covered-1 hr or until rice is tender. Drain. Melt butter in 3 qt pan.. Add carrot, cok and stir 3 min. Add onion, celery and mushrooms and stir 3-4 minutes until vegetables are tender.
Remove from heat. Whisk in flour, salt and pepper until smooth. Stir in remaining broth.
Bring to a boil, cook and stir 1 minute until thickened. Stir in chicken and sherry. reduce heat to low-simmer uncovered 3 min- Spoon soup over 1/4 rice.
