Potato Leek Soup

Ingredients

  • 2 tablespoon Vegetable oil
  • 1 Onion ; thinly sliced
  • 4 Leeks ; chopped
  • 4 medium Potato ; finely chopped
  • 2 can Chicken broth
  • 2 cans Water
  • Salt & pepper ; to taste
  • 2 cups Heavy cream

Preparation

Step 1

Heat oil and add onions. Saute until light brown. Add leeks and saute 2 minutes more. Stirring constantly, add all remaining ingredients, except cream. Bring to a boil and then simmer for 40 minutes.

Remove veggies with a slotted spoon. Puree in blender and then return to soup. Add cream, bring to a boil and serve.
