lbs.(2 kg.) pork side ribs, sweet and sour spareribs
c. (50ml.) each black bean sauce and water
tbsp. (50ml.) dry sherry
tbsp. (25ml.) each honey and soy sauce
cloves garlic, minced
tbsp. (15ml.) toasted seame seeds
Using a fork, gently lift and peel the membrane away from the backside of each rack of pork ribs and discard. Cut ribs into single rib or bite size pieces.; place in a large plastic bag or in sealable container. Combine remaining ingredients except sesame seeds; mix well and pour over ribs. Close bag or container and marinate in the refrigerator a minimum of 6 hours to a maximum of 24 hours. Drain ribs, reserving marinade. Place ribs in shallow roasting pan; cover with foi land bake in a 325F oven for 1 1/2 hours. Meanwhile bring marinade to a boil for 5 minutes. Brush ribs with the boiled marinade; bake, uncovered, for 30 to 45 minutes or until dark golden. Sprinkle ribs with sesame seeds and serve hot.
