Ingredients

  • 2 1/2 cups all purpose flour
  • 1/4 tsp kosher salt
  • 1 cup (2 sticks) unsalted butter
  • 1/2 cup sugar
  • 3 egg yolks
  • 1 1/4 tsp pure vanilla extract
  • 1 tsp grated lemon zest
  • 1 cup pine nuts or slivered almonds
  • 1 egg white, lightly beaten

Preparation

Step 1

1. Heat oven to 350 F. Line baking sheets with parchment paper. In a medium bowl, whisk together the flour and salt.
2. Using an electric mixer, beat butter and sugar in a large bowl until light and fluffy. Add egg yolks, vanilla and lemon zest, and beat to combine. With mixer on low, gradually add the flour mixture, mixing just until incorporated.
3. Place pine nuts or almonds in a small bowl and egg white in a second small bowl. Roll dough into 1 inch balls (about 1 Tbsp each). Dip top and sides of each ball first in egg white, then into nuts, pressing gently to help them adhere.
4. Place cookies nut-side up on prepared baking sheets, spacing them 2 inch apart. Bake until nuts are golden brown and cookies are lightly golden around edges, 16 to 18 mins. Let cookies cool on sheets for 5 mins. before transferring them to a wire rack to cool completely.
