Ingredients
- 4 t. butter
- 1 shallot,,chopped
- 3 garlic cloves, minced
- 1 T. fresh lemon juice
- 1/2 t. salt
- 1/2 t. pepper
- 1 # large shrimp peeled, butterflied, and deveined
- 2 T chopped fresh flat-leaf parsley
Preparation
Step 1
1. Preheat the broiler. Melt the butter in a large nonstick skillet over medium heat, then add the shallot and garlic. Cook, stirring frequently, until golden, 4-5 min. Remove from the heat; stir in the lemon juice, salt and pepper. Add the shrimp and toss to coat.
2. Spread the shrimp in a shallow flameproof baking dish large enough to hold the shrimp in a single layer. Broil 3-4 inches from the heat, until the shrimp are just opaque in the center and lightly browned on the outside, about 3 minutes on each side. Sprinkle with parsley and serve w/ lemon wedges.
