Ingredients

    15-19oz Cannellini Beans, rinsed and drained

  • 1

    pound sweet italian sausage links, casings removed

  • 1

    tablespoon olive oil

  • 2

    medium white onions, chopped

  • 8

    garlic cloves, crushed with garlic press

  • 1

    28 oz plum tomatoes in juice

  • 2

    13¼-14/½ Chicken Broth

  • 2

    cups water

  • ½

    tsp salt

  • 1

    rounded cup ditalini or tubetti pasta

  • 1

    10-12oz frozen chopped spinach

  • Parmesan cheese

Directions

1.Heat a 5 qt dutch oven over medium high heat till hot, add sausage, cook till browned, breaking up meat with a wooden spoon, with slotted spoon,remove sausage to bowl 2. Reduce heat to medium, in drippings add olive oil, cook onions til tender and golden about 10 minutes, add garlic and cook for 1 minute, add tomatoes and their juices- using spoon to break up tomatoes, add chicken broth and water. Over high heat, heat to boiling. Reduce heat to low, cover and simmer for 15 minutes 3. Add beans, spinach and sausage, cover and simmer for 15 minutes 4. Meanwhile in a 3 qt saucepan, cook pasta till al dente, drain and set aside 5. Just before serving, add pasta.Serve with grated parmesan cheese
