Ingredients

  • Ingredients:
  • 2 eggs
  • 1 stick (aka: 1/2 C or 8 Tbs.) unsalted butter, melted and cooled
  • 1 cup sour cream
  • 1 can sweet corn, undrained (15 oz. can)
  • 1 can creamed corn (15 oz. can)
  • 1 box Jiffy corn muffin mix

Preparation

Step 1

Preheat oven to 350°.
Mix everything together in a large bowl.
Transfer to lightly greased 9×13” baking dish.
Bake uncovered, on middle rack, for one hour or until golden brown on top.
Can be baked ahead and reheated. Cut into 2″ x 2″ squares and serve warm.
