  • 2 cups frozen corn, black bean, peppers package 1/2 cup chunky salsa
  • 1/4 cup cilantro
  • garlic, onion, salt, pepper spice mixture

Step 1

Thaw frozen vegetables ahead of time Preheat oven to 450 degrees. Spray foil with cooking spray. Sprinkle spice mixture on both sides of fish and place 1 fish fillet in center of each foil rectangle. Top with vegetables and salsa. Bring up sides and double fold. Fold ends securely. Bake 18 to 20 minutes on a cookie sheet in oven. Sprinkle with cilantro Makes 4 servings
